Sauces are your ammunition to creating quick, tasty meals — they will transform simple steamed veg and grilled meat into something memorable.

This creamy blue cheese sauce that can be whipped up in a matter of seconds, while you steam some veg and let your meat rest — voilà, dinner is served in 10 minutes.

If you have an aversion to blue cheese, I'd still recommend you give this one a go. Once cooked, the little pockets of penicillin mellow, and add depth and saltiness to a meal.

2 Minute Blue Cheese Sauce

SERVES 6

150ml double cream

60g blue cheese

salt and pepper

Ingredients

In a saucepan, heat the cream and blue cheese over a medium to low heat.


Stir and cook until bubbling and thick.


Season with salt and pepper — this is very important, as the salt brings out the cheesiness.


Serve with your favourite vegetables and meat. Shown above, spears of steamed broccoli were slicked with sauce — highly recommended!
