Chocolate Mousse
SERVES 6
50g dark chocolate (at least 85% cocoa)
50g butter
3 eggs
1 tablespoon natural sweetener *optional
1 teaspoon vanilla extract (use one with no sugar like ndali or nielson)
1 avocado

Ingredients
Gently melt the butter and chocolate in a bowl over simmering water.
Using a hand whisk, beat the eggs and sweetener till pale, light and have doubled in size — this should take about 3–5 minutes.
Blend the avocado, melted chocolate-butter, vanilla extract and a pinch of salt until smooth and creamy.
Gently fold the chocolate mixture into the eggs.
Divide between 6 ramekins and chill over night.
