Creamy, yet light and fresh. Just in time for spring sunshine, enjoy this dressing with fish, or a lovely salad like this, simple endive and bacon.

Creamy Herb Dressing

MAKES A JAR

2 heaped tablespoons sour cream

3 heaped tablespoons natural (full fat yoghurt)

1 clove garlic

1/2 lemon, zest and juice

1 teaspoon dijon mustard

splash apple cider vinegar 

2 tablespoons minced parsley (plus more for garnish)

2 tablespoons minced chives (plus more for garnish)

1 teaspoon thyme leaves (plus more for garnish)

teaspoon salt

black pepper

Ingredients

Quite simply, add everything to a blender and blitz, till smooth. Adjust seasoning to your taste—trust your instinct here and add more or less of what you like.
