Salty, crunchy, creamy and fresh, enjoy this salad on its own or with your favourite fish.
Endive, Bacon and Creamy Herb Dressing
SERVES 1
1 endive (about 100g)
2 pieces of streaky smoked bacon (no added sugar)
2 tablespoons creamy herb dressing (see recipe below)
salt and pepper
soft herbs like parsley and chives to garnish
Ingredients
Slice endive at a diagonal into 1/2 inch strips—remove the core if you find it too bitter (I personally love it!).
Slice the bacon into lardons and fry over a medium heat, until crispy and golden.
Top the endive leaves with crispy bacon (make sure to drizzle with any bacon fat), and drizzle with fresh, creamy herb dressing.
Add extras like avocado, walnuts and seeds if you fancy.
This salad goes particularly well with fish
