RACHEL LETT

This is our version of the Californian classic, green goddess sauce. Full of fragrant herbs and healthy fats, it’s a sure way to boost flavour and nutrition in any meal.

Green Goddess Dressing & Dip

SERVES 6

4–6 anchovies (depending on your taste)

1 ripe avocado, pitted and skin removed

1 garlic clove

2 tablespoons chopped parsley

2 tablespoons chopped coriander

2 tablespoon chopped chives

1 tablespoon chopped tarragon

2 tablespoons mayonnaise

2 tablespoons apple cider vinegar

1 lemon, juiced

salt & pepper

water

Ingredients

In a blender, add all the ingredients, apart form the vinegar, lemon juice and water. Blitz until smooth, and then add the vinegar and lemon juice.

Season with salt and pepper.

Serve as a dip, or thin it out with water to make it into a dressing.

Enjoy with wedges of little gem lettuce, leftover meat and vegetables or cauliflower pizza.
