Crunchy, cooling cucumber, creamy avocado, fresh mint and salty feta, this is a quintessential summer salad —perfect for hot days!

Mint, Cucumber, Avocado & Feta Salad

SERVES 4

1 small or 3/4 large cucumber

1 avocado

120g feta crumbled

3 tablespoons apple cider vinegar

1/2–1 teaspoon sea salt

1-2 tablespoons mint chopped

1 tablespoon poppy seeds

Ingredients

Dice the cucumber and avocado into 1 cm cubes, transfer to a serving dish.


Add the rest of the ingredient, toss, and season to taste.


Finish off with an extra crumble of feta, chopped mint and serve.
