Fresh and roasted radishes are two different species. One; crisp, fresh and peppery; and the other, soft, caramelised, and dare I say it, potato like! Try them with your favourite roasts and see for yourself!
Roasted Radishes
SERVES 6
~1 kg radishes (you can use any quantity available)
melted ghee
salt and pepper
Ingredients
Preheat the oven to 200°C (392°F)
Slice the radishes in half. In a roasting tray, add the radishes with a tablespoon of ghee and salt and pepper.
Put the tray in the oven to melt the ghee for a minute or two. Once th ghee is melted, toss the radishes with the ghee and salt and pepper
Roast for 30–40 minutes, until golden, with slightly charred, crispy edges.
Enjoy as a low-carb alternative to potato!
