A Pad Thai inspired recipe for your collection of delicious dressings — ready to add punch to any meal!

Spicy Almond Dressing

SERVES 6

3 tablespoons smooth almond butter

4–6 tablespoons warm water

3 tablespoons apple cider vinegar

1 tablespoon liquid aminos

1 garlic clove minced

2 teaspoons fresh ginger peeled and minced

1 teaspoon sesame oil

1–2 teaspoon dried red chilli flakes

1 lime juiced

salt

Ingredients

Blend all the ingredient except the water until smooth.


Add water, and mix until the dressing has reached your desired consistency. The dressing will solidify when chilled, so you may need to add more water to thin it out later.


Massage into robust greens, like this kale salad, or drizzle over delicate salad leaves.
